Hi! It’s a new day & a new week ! I hope everyone is doing great. Not sure about you, but I tend to scroll through TikTok on my downtime, lol. I ended up finding this lasagna soup recipe and it looked so good I had to give it a try. I wanted to share it because it honestly came out so delicious. I enjoyed it & so did my youngest son even though he isn’t a fan of tomatoes! 🙌🏽
Italian sausage or ground beef ( I used a pound of both to make it more meaty & I loved how it came out )
Heavy whipping cream
Mozzarella cheese, Italian cheese blend, & parmesan
Pasta sauce ( which ever is your favorite)
Chicken & Beef broth
Diced tomatoes ( 1 can is fine unless you really like tomatoes 😉 )
Brown your meat ; I used minced garlic and chopped onions and seasoned it with garlic salt & pepper
In a pot add your meat, add pasta sauce ( I used the whole bottle) , add 1 carton of chicken broth & only half of the beef broth ( save the other half for when you reheat because the soup will thicken) , add diced tomato’s & crushed up lasagna noodles. Cover and let it cook about 8-10 minutes.
Make ricotta mixture; ricotta cheese, both cheeses & seasonings of your choice.
Add ricotta mixture to soup and heavy whipping cream
Put heat on high and let it cook about 5 minutes. Check and make sure your noodles are soft and the taste is to your liking.
Then enjoy !!

Is Fudge everywhere during the holidays or is it just me? I remember at my past jobs people would make fudge during potlucks or even make goodie bags with fudge to give out as little gifts. I love fudge, but I never made it before. I was at Michael’s the craft store the other day and ran across these Christmas theme candy molds & I thought they would be perfect for the fudge I wanted to make. They were very inexpensive & I was able to use a coupon , they don’t have the same one I bought online but they have this cute snowman one:
There are so many different fudge recipes you could try, and so many add in’s you could really pick & choose. I wanted to do the simplest just in case I messed up.. since I never tried it before, lol. I had some walnuts at home so I added those into my fudge.
1 cup of semi- sweet chocolate chips
1 cup milk chocolate chips
1 14 oz can of sweetened condensed milk
1 teaspoon of vanilla extract
Any add ins; I did walnuts ( peanuts, coconut pieces, any candy pieces, etc )
Grab your saucepan , a lot of recipes say you use a broiler. I just put my heat to the lowest setting.. this is so your chocolate doesn’t burn. Place your condensed milk first, add your chocolate chips and then vanilla. Keep stirring and watch so it does not burn or bubble. Once it melts all the way put your add ins and stir then its ready to be put into your greased pan or candy molds. Put in the refrigerator for an 1 or 2. Your all done easy peazy!
The molds came out pretty well, I think the images could have came out a little better but all in all I thought it was going to be much harder or that I would burn the chocolate. Lol, it was a success and we all enjoyed it! It doesn’t taste to rich or chocolaty, its very smooth and the walnuts give it a little crunch. I definitely want to try to do peanut butter fudge next time 😊
